PORK RIBS

Soak a rack or side of ribs in a stainless steel bowl
in:

1 gal. tap water
1 lb. pickling salt
1 tsp. saltpetre
Put a plate on ribs to keep them under solution. Cover
bowl and put in refrigerator and soak 10 days. Remove ribs and
rinse very well in cool water. Put in stew pan and add:
3 peppercorns
1 large onion
2 bay leaves
2 c. white wine
Cover with water and bring to a boil. Simmer about 1
hour or until tender. Serve with your favorite dried beans.
