MEXICAN CASSEROLE 2 lb. ground beef 1 large onion, chopped 1 can enchilada sauce 1 can cream of mushroom soup 1 can cream of chicken soup 1 can chopped green chiles 1 pkg. corn tortillas 1 to 1 1/2 lb. cheese slices Brown beef in a large skillet. Add onion to beef and cook until tender. Stir in the sauce, soups and green chiles. Simmer until well mixed. Break tortillas into small pieces. Grease large, deep casserole and place tortilla pieces in bottom. Cover with a thick layer of the meat mixture and then with slices of cheese. Repeat layers until casserole is 2/3 full with cheese on top. Bake at 350 degrees for 45 minutes. Freezes well.
