TEX-MEX CASSEROLE
(Microwave)
1 lb. ground meat
2 c. chopped onion
1 (16 oz.) can cream style
corn
1 (16 oz.) can stewed tomatoes
1 (10 oz.) can enchilada sauce
2 c. grated cheese
1 pkg. tortillas (12)

Cook meat and onions in microwave, using a plastic
strainer over a bowl so fat will drain. Mix together with
corn, tomatoes and enchilada sauce. Tear tortillas into pieces
and cover bottom of large baking dish. Pour half of meat
mixture on tortillas. Top with half of the cheese, then layer
the rest. Top with cheese. Cover with Saran Wrap and cook in
microwave for 10 minutes.
