1 pkg. manicotti stuff-a-roni
1 1/2 c. small curd cottage
cheese or Ricotta cheese
1 egg, slightly beaten
1/4 c. grated Parmesan cheese
1/2 tsp. sweet basil
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. frozen chopped spinach
1 c. chopped cashews
Let frozen spinach thaw. Then mix all stuffer ingredi-
ents; set aside.
1 c. whole tomatoes
1 c. tomato sauce
1 chopped onion
1 clove garlic, chopped
1 tsp. salt and pepper
1/4 tsp. rosemary, basil,
thyme and parsley flakes
Cook until medium thickness. In meantime stuff
manicotti shells. Place in casserole and any extra filler, put
on top. Pour sauce over stuffers. Bake at 375 degrees for 1 hour.
