CHEESE GRITS

1 c. quick grits
3 c. boiling water
1 stick butter
salt and pepper
4 eggs
1 c. milk
1 c. grated or cut sharp
cheese

Preheat oven to 350 degrees. Cook grits in 3 cups boiling
water until thick. Remove from heat. Add butter, salt and
pepper. Stir until butter melts. Add milk to well beaten
eggs; add to grits and mix well. Add cheese. Pour into a
3-quart greased casserole. Bake, uncovered, for 45 minutes.
Good served with sausage.
