SPINACH QUICHE

1 (10 oz.) chopped spinach
30 oz. or 32 oz. Ricotta
cheese
3 eggs
8 oz. mushrooms
1/8 tsp. salt to taste
1/8 tsp. pepper to taste
1/8 tsp. garlic to taste
2 frozen pie crust (9-inch)
4 oz. shredded Mozzarella
cheese

Defrost spinach and drain. Beat eggs. Mix all ingredi-
ents. Bake at 350 degrees for 45 minutes.
Optional: In place of mushrooms can use onion, ham or
bacon bits. Instead of fresh mushrooms can use canned but
drain liquid. Makes 2 pies.
