DAVID EYER'S PANCAKE

2 eggs
1/2 c. milk
1/2 c. flour
pinch of nutmeg

Preheat oven to 450 degrees. Using a small bowl and whip,
combine ingredients. Then stir ingredients, leave it a little
bumpy. Set bowl aside. Melt in 10 to 12-inch iron skillet or
8-inch square pan, 4 tablespoons butter until butter bubbles.
Remove from pan and pour batter into pan. Bake 15 to 20
minutes until golden brown. Sprinkle with 2 tablespoons
confectioners sugar and return to oven for 2 minutes. Remove.
Sprinkle top with 1 teaspoon lemon juice. Serve with syrup,
jelly or plain.
