GOVERNOR'S FISH IN COCONUT MILK 2 lb. fish, sliced 2 inches thick 1/2 onion, sliced 1/4 c. vinegar 1/2 c. water 1 clove garlic, mashed 1 green pepper, sliced 1 1/2 c. thick coconut milk salt and pepper to taste Put all ingredients in a pot except coconut milk and cook for about 20 minutes on medium heat or until fish is cooked. Add coconut milk last. Remove from direct heat. Do not boil coconut milk. Serve with steamed rice.
