(A Quick Meal)
2 Tbsp. oil
1 small minced onion
1 small clove garlic, crushed
1 green chile, mashed or salsa
1/2 tsp. oregano
1 (15 oz.) can tomato sauce
Saute onion and garlic in oil. Add spices, chiles and
tomato sauce. Simmer until heated. Soften tortillas in heated
oil in another pan (takes just a minute; they get too crispy
if left too long). To serve, layer 1 or 2 or 3 tortillas on a
plate, place 1 or 2 or 3 fried eggs on top and pour some sauce
