2 pkg. frozen chopped spinach
or fresh Swiss chard
1/2 c. chopped parsley
1/2 c. bread crumbs
Parmesan cheese to taste
1 clove crushed garlic
1/4 c. oil
4 eggs, well beaten

Cook 2 packages chopped frozen spinach or fresh Swiss
chard to equal same. Drain, reserve liquid. Add parsley, bread
crumbs, Parmesan cheese, garlic, oil and eggs. Cook noodles
(lasagna style) in reserved liquid plus extra to fill pan.
Grease lasagna pan, layer noodles and sauce with vegetable
mixture. Add grated cheese to top. Bake in 350 degrees oven for 40
minutes. To be served with meat or meatless sauce. Serves 6.
