CHICKEN KIEV

chicken breasts, deboned and
skinned
parsley
flour
egg, beaten
water
ham, thin slices
cube of butter, sliced into
1/4 inch slices
Jack cheese, sliced into 1/4
inch sticks
fine dry bread crumbs

Amounts for the ingredients depends on the number of
people being served. Small breast will serve 1 where a large
breast will serve 2. Place chicken between 2 pieces of wax
paper. Pound from center out to make 1/4 inch fillet. Season
with parsley, salt and pepper to taste. Add a stick of butter
and cheese and a slice of ham. Roll up chicken short side
first, then long, short and then long side again. Coat each
roll with flour, then dip in beaten egg and water mixture, then
in bread crumbs. Do this same procedure with remaining chick-
en. Chill thoroughly. Deep fry at 375 degrees for about 5 minutes or
until golden brown. This is great to prepare ahead of time for
company!
