SPAGHETTINI ALA CARBONARA

3/4 lb. spaghetti or linguini
6 oz. pancetta (or any good
quality bacon)
3 eggs
3 Tbsp. cream
1/4 c. grated Parmesan cheese
ground pepper
2 Tbsp. butter

Cut bacon into 1/2 inch pieces; fry gently until crisp.
Remove from pan and set aside. Beat until nice and foamy eggs,
cream, cheese and pepper. Add the egg mixture to hot bacon
grease left over in pan. Cook until just almost set. Pour
over cooked spaghettini; add butter and bacon pieces. Toss and
serve immediately. This dish must be eaten right away after
cooking.
