CHICKEN AND BISCUIT CASSEROLE

chicken
3 Tbsp. butter
3 Tbsp. flour
5 c. chicken broth
salt and pepper

Boil chicken until very tender. Remove from broth,
remove skin and bones, break chicken into pieces. Melt butter;
add flour. Mix until smooth. Add chicken broth to make a thin
sauce. Season with salt and pepper. Place chicken in casse-
role and pour sauce over it. Make soft dough of:
2 c. flour
3 Tbsp. shortening
2 Tbsp. baking powder
1 tsp. salt
Add just enough milk to hold together. Drop the dough
by teaspoons over the chicken and sauce. Bake 30 minutes.
