HOT CHICKEN SALAD 4 c. bite size cooked chicken 2 c. chopped celery 4 diced hard cooked eggs 1 can cream of chicken soup 1 tsp. salt 2 Tbsp. lemon juice 1 to 2 tsp. onion, finely chopped 2 pimentos, finely chopped (or 1 small can) 3/4 c. mayonnaise 1 c. Colby cheese 1 1/2 c. crushed potato chips or small chips 2/3 c. toasted almonds Mix together chicken, celery, eggs, cream of chicken soup, salt, lemon juice, onion, pimentos and mayonnaise. Place in casserole dish. Spread cheese and potato chips, then almonds over top of mixture. Bake in 350 degrees oven for 45 minutes. Cooked turkey may be substituted for chicken.
