MEXICAN RICE

1 c. rice
4 Tbsp. oil
1 Tbsp. chopped green peppers
1 small onion, chopped
2 Tbsp. chili powder
1 c. tomatoes, chopped
1 small clove garlic
1 c. raisins
2 c. water
2 slices bacon
1 lb. raw hamburger meat
salt to taste

Wash and drain rice, wash raisins in hot water and
drain. Heat half the oil in frying pan, add washed rice and
fry a light brown; stir often so not to burn. Then in another
pan, add rest of oil, hamburger, onion, garlic and green
pepper. Fry 10 minutes, then add salt, tomatoes, chili powder,
raisins, rice and water. Pour in baking dish and lay strips of
bacon on top and bake until rice is tender, add water if
needed.
