1/4 c. melted butter
1/4 c. orange juice
1/4 c. light rum
1/2 tsp. grated orange rind
1/8 tsp. ground ginger
1/2 tsp. salt
1/8 tsp. pepper
1 crushed garlic clove
1 (3 lb.) fryer, cut up
Preheat oven to 350 degrees. Combine all liquids and season-
ings. Brush chicken parts generously. Arrange, skin side up,
in shallow baking pan. Baste occasionally with remaining
mixture. Bake 1 hour or until golden and tender. Yield: 4
