STUFFED GREEN PEPPERS

4 medium green peppers
1 lb. lean ground chuck
1 c. cooked rice
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 c. chopped onion (or
equivalent amount dried
minced onion)
1 (8 oz.) can tomato sauce
1 c. shredded Cheddar cheese

Wash and halve green peppers lengthwise. Lightly mix
beef, rice, onion, salt, pepper and 1/2 cup tomato sauce.
Place mixture in pepper halves. Arrange in shallow baking
dish. Pour remaining sauce over peppers. Cover with foil and
bake for 45 minutes in 350 degrees oven. Remove cover. Top with
cheese and bake 15 minutes longer.
