CHICKEN FRIED RICE

2 c. diced chicken
1 Tbsp. soy sauce
2 1/2 c. chicken broth (or 3
bouillon cubes and water)
1 c. uncooked rice
1/3 c. oil
1/2 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped celery
2 lightly beaten eggs

Mix chicken and soy sauce, salt to taste and set aside.
Put oil in electric skillet. Brown rice about 25 minutes.
Reduce heat to simmer. Add chicken and broth to rice mixture.
Simmer 20 to 25 minutes or until rice is soft. Add onion,
green pepper and celery. Cook until tender. If there isn't
enough moisture add one bouillon cube and 1/4 cup water. Make
hole in middle of rice. Put eggs in and scramble. Then mix
with rest. Serve hot.
