CHINESE STYLE FRIED RICE
1 1/3 c. Minute rice
3 Tbsp. butter
1/3 c. chopped onion
1/3 c. water
2 to 3 Tbsp. soy sauce
In a small saucepan bring one cup water to a boil. Stir
in 1 1/3 cup Minute rice. Remove from heat. Cover and let
stand 5 minutes. Meanwhile using a 10-inch skillet cook one
slightly beaten egg in 3 tablespoons butter. Add 1/3 cup
chopped onion and then rice. Saute stirring over medium heat
until mixture is lightly browned. Mix 1/3 cup water with 2 to
3 tablespoons soy sauce and stir into rice mixture. Makes 4
