MOCK PEROGIS 4 c. cooked, mashed potatoes 1 large box jumbo macaroni shells 3/4 lb. butter or margarine, melted 1 to 2 onions, chopped 1/4 lb. Longhorn cheese 1 (8 oz.) pkg. cream cheese 2 Tbsp. vinegar Prepare mashed potatoes and keep warm. Cook jumbo shells; drain. Rinse well. Set aside. In a little butter saute onions and vinegar. Add to the mashed potatoes and then add the cream cheese. Beat until well blended. Fill each jumbo shell and layer in 9 x 12-inch glass dish. Melt a little margarine in bottom of dish and pour the remaining butter over shells. Cover with foil and bake 45 minutes at 325 degrees. You can sprinkle the cheese over the shells before baking or add it to the filling.
