(Mushroom Quiche)
9-inch unbaked pie shell
2 Tbsp. butter
2 c. thinly sliced mushrooms
2 c. grated Swiss cheese
4 eggs
1 1/2 c. half and half
1/2 tsp. salt
1/4 tsp. pepper
dash of nutmeg

Preheat oven to 375 degrees. Prepare pie shell. Refrigerate.
Saute mushrooms in hot butter. Sprinkle cheese over bottom of
pie shell. Arrange sauteed mushrooms over cheese. In a medium
bowl beat eggs with half and half, salt, pepper and nutmeg
until combined but not frothy. Pour into pie shell. Bake 40
to 45 minutes until top is golden and center is firm. Cool ten
