QUICHE LORRAINE

12 slices bacon (about 1/2
lb.), crisply fried and
crumbled
1 c. shredded natural Swiss
cheese (about 4 oz.)
1/3 c. minced onion
4 eggs
2 c. whipping cream or light
cream (20%)
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Heat oven to 425 degrees. Prepare pastry. Pastry for a 9-inch
one crust pie. Sprinkle bacon, cheese and onion in pastry
lined pie pan. Beat eggs lightly. Beat in remaining ingredi-
ents. Pour cream mixture into pie pan. Bake 15 minutes.
Reduce oven temperature to 300 degrees and bake 30 minutes longer or
until knife inserted one inch from edge comes out clean. Let
stand 10 minutes before cutting. Serve in wedges. Makes 6
main dish servings (8 appetizer servings).
