SPINACH-PASTA SAUCE CHICKEN 1 pkg. spaghetti 3 Tbsp. salad oil 2 lb. boneless chicken breasts Sauce: 1 Tbsp. salad oil 1/4 c. chopped onion 1 Tbsp. minced garlic 1 pkg. frozen, chopped spinach 1 c. heavy cream 1/2 c. chicken broth 1/4 c. grated Parmesan 1/4 tsp. each salt, pepper and nutmeg Cook pasta as package label directs. Drain and return to pot. Meanwhile in large skillet heat 3 tablespoons oil. Saute chicken 8 minutes on each side or until tender. Keep chicken and pasta warm. Make sauce. In small saucepan heat oil. Saute onion and garlic 3 minutes or until tender. Add spinach, cream, broth, cheese and seasonings. Bring to boil- ing. Reduce heat. Simmer uncovered 3 minutes or until sauce thickens slightly. Pour sauce into a blender or processor and puree until smooth. Reheat if necessary. Pour sauce over pasta tossing to coat well. On serving platter arrange chicken over pasta.
