STUFFED RIGATONI

1 1/2 lb. ground beef
1/2 lb. ground pork
1/2 c. chopped onion
1/4 c. chopped parsley
1/4 c. grated cheese
2 Tbsp. bread crumbs
2 Tbsp. oil
1 clove minced garlic
2 tsp. salt
1 (No. 2) can spinach
1 tsp. salt
1/2 c. grated cheese
1 egg
1 lb. rigatoni or large shells
spaghetti sauce

Combine beef, pork, onion, parsley, 1/4 cup grated
cheese, bread crumbs, garlic and salt. Form into meatballs.
Heat oil in large skillet and brown meatballs. Mash meatballs
in bowl and add spinach (that has been drained), 1 teaspoon
salt, 2 tablespoons grated cheese and egg and mix. Cook
rigatoni 12 to 15 minutes. Stuff rigatoni. Add spaghetti
sauce about 1/2-inch on bottom of large casserole dish. Layer
stuffed rigatoni, grated cheese and sauce. Cover and cook at
350 degrees for 30 minutes.
