VIRGIE COGSWELL'S CHILIES RELLENOS

1 lb. Cheddar cheese (or less)
1 lb. Jack cheese (or less)
3 (4 oz.) cans green chilies
6 eggs
small amount milk
paprika

Grate a generous layer of each cheese in 9 x 13-inch
baking dish. Rinse seeds off chilies and layer over cheese,
using 1/2 of chilies. Make a second layer of cheeses, another
of chilies and finish with a 3rd layer of cheeses. Beat eggs.
Mix in small amount of milk and pour over all. Sprinkle with
paprika and bake at 350 degrees for 40 to 45 minutes. Can be assem-
bled ahead (the night before for a brunch dish) and amounts can
be adjusted to taste. Also good cold.
