HOMEMADE NOODLES 2 1/4 to 2 1/2 c. flour 1/3 c. water 2 eggs plus 1 egg yolk 1 Tbsp. oil 1 tsp. salt Combine one cup of flour and rest of ingredients. Beat 2 minutes at low speed of electric mixer. Stir in remaining flour to make soft dough. Knead on floured surface, about 10 minutes. Cover; let rest 30 minutes. Roll out; cut in strips, about 1 1/2-inches wide. Cut strips into noodles about 1/4-inch wide. Let noodles dry about two hours before cooking.
