BEEF AND RICE CASSEROLE

1 1/2 lb. ground beef
1 c. chopped celery
1/2 c. chopped onion
1/4 c. chopped green pepper
1 c. sliced black olives
1 qt. or 2 (16 oz.) cans
tomatoes, chopped and
undrained
1 c. uncooked white rice
1 c. water
1 Tbsp. chili powder
1 1/2 tsp. salt
1 tsp. Worcestershire sauce
1/2 tsp. pepper
3 oz. Cheddar cheese, cut into
strips

Brown ground beef; add celery, onion and green pepper.
Cook over moderate heat 3 to 5 minutes. Drain. Add half cup
black olives and all other ingredients, except cheese. Trans-
fer to oblong 2 or 3-quart baking dish. Cover with foil; bake
at 350 degrees about 1 hour or until rice is tender, stirring mixture
once after 30 minutes. Uncover; arrange cheese strips on top
also remaining olive slices. Heat a few more minutes until
cheese melts. Makes 6 to 8 servings.
