POLISH POTATO PANCAKES

6 medium potatoes, grated
2 eggs
1 level Tbsp. salt
3/4 c. milk or buttermilk

Put grated potatoes in bowl. Add eggs and beat togeth-
er. Add flour and salt. Stir in alternately with milk. Place
frying pan on heat and put in shortening (about 1/4-inch
thick). Heat well. Drop about 2 tablespoons batter to a
pancake. Bake in shortening until side is medium brown. Turn
over and bake other side. Makes 12 to 15 pancakes. Serve
while warm. Taste exceptionally good with applesauce.
