GERMAN POTATO PANCAKES 2 Tbsp. flour 1 1/2 tsp. salt 1/4 tsp. baking powder 1/8 tsp. pepper 6 medium potatoes (about 3 c.) 2 eggs, well beaten 1 tsp. or more grated onion 1/4-inch shortening in heavy skillet Heat in a heavy skillet over low heat 1/4-inch shorten- ing. Mix together and set aside, flour, salt, baking powder and pepper. Wash, pare and finely grate potatoes. Set aside. Blend dry ingredients into a mixture of 2 eggs (well beaten). Add grated onion. Pat potatoes dry. Add potatoes to egg mixture. Mix roughly. When shortening is hot, but not smok- ing, begin cooking. Use about 2 tablespoons for each pancake. Turn over only once. Makes about 20 pancakes.
