POTATO-ZUCCHINI CASSEROLE

potatoes, desired amount,
peeled and sliced
grated medium to sharp cheese
to taste
white sauce to cover potatoes
2 to 3 small tender zucchini
salt and pepper to taste

Layer potatoes and grated cheese in large greased
casserole (reserve some cheese for top of casserole later).
Season each potato layer to taste. Cover potatoes and cheese
layers with white sauce and mix lightly. Bake at 350 degrees for 30
minutes or until tender. Remove from oven. Cover hot potatoes
with layer of thinly sliced zucchini and remaining cheese.
Bake 20 minutes more or until zucchini is tender.
