SAUERKRAUT AND NOODLES 1 gal. can sauerkraut 1 (1 lb.) box shell noodles, medium or small 3 medium onions, diced 1 1/4 pieces salt pork, diced and browned 1 large can mushrooms season to taste Cook noodles slightly underdone. Dice and brown the salt pork. Use all the fat. (Bacon fat can be substituted.) Add onions to browned salt pork. Rinse sauerkraut well. Combine all ingredients in roasting pan and cook for 30 minutes at 350 degrees. This can be prepared day ahead. Just allow more time to roast. Also freezes well. Serves 40, but is easily cut down.
