ZUCCHINI AND BEEF HOT DISH 1 lb. ground beef, browned 3/4 c. uncooked rice 2 medium zucchini, cubed 1 c. drained canned tomatoes, cut up 1/2 c. chopped onion 1 clove garlic, crushed 1/2 tsp. salt 1/4 tsp. pepper 1 1/2 c. hot water In a 10-inch skillet brown beef, stirring to break up. Drain and discard all fat. Stir in rice and 1 1/2 cups water. Stir in remaining ingredients. Bring to a boil. Cover and simmer 20 minutes or until rice is tender and all liquid absorbed. Stir to mix.
