GRITS 'N' CHEESE BAKE

2 c. boiling water
1 1/3 c. instant grits or 5 (8
oz.) pouch packets instant
grits
1 1/2 c. shredded Cheddar
cheese
1/4 c. grated Parmesan cheese
2 eggs, beaten
2 Tbsp. freeze-dried chives

Heat oven to 350 degrees. Pour water over grits and stir until
blended. Stir in cheeses. Add eggs and chives. Mix well.
Pour into greased 1 1/2 quart casserole. Bake 40 minutes or
until knife inserted in center comes out clean. Makes 6
servings.
