FRITTATA LORETTA Base: 2 Tbsp. margarine 6 eggs 1/2 tsp. salt dash of pepper 1/2 c. grated Swiss cheese Filling: 1/2 c. diced ham or bacon 1 c. sliced mushrooms 2 Tbsp. chopped parsley 2 Tbsp. chopped green onions 2 Tbsp. chopped red or green peppers Preheat broiler. Beat eggs with salt and pepper. Stir in grated cheese and filling ingredients. In heavy ovenproof 10-inch skillet, melt margarine over medium heat. Add the egg mixture and lower the heat. Cook undisturbed until the bottom is golden brown when edge is lifted. Put the skillet 6-inches under source of heat in the broiler for 30 seconds or until the top is golden brown. Cut into wedges.
