CHICKEN BROCCOLI CASSEROLE|
2 boxes frozen broccoli spears
4 Tbsp. flour
2 c. chicken broth
1 c. milk
1 tsp. salt
1/2 tsp. curry powder
1 tsp. lemon juice
1 c. mayonnaise
3 to 4 c. chicken, cooked and
1/2 c. shredded sharp Cheddar
1/2 c. soft bread crumbs
1 Tbsp. melted butter
Place cooked broccoli in bottom of a 13 x 11-inch
casserole. (Do not overcook broccoli.) Place chicken on top of
broccoli. Combine flour, broth, milk, salt, curry powder,
mayonnaise and lemon juice to make a sauce and pour over the
chicken. Mix the cheese, bread crumbs with melted butter and
sprinkle on top. Then decorate with strips of pimento if
desired. Bake at 325 degrees for 45 minutes.
