EGGS, CHIP BEEF CASSEROLE

Sauce:

4 slices bacon
1/2 lb. chipped beef, shredded
1/4 c. oleo
1 (4 oz.) can mushrooms
1/2 c. flour
pepper
1 qt. milk

Saute bacon. Remove from heat, add chip beef, butter and
3/4 mushrooms. Sprinkle flour and pepper over mixture.
Gradually stir in milk. Cook until thickened and smooth,
stirring constantly. Set aside.
16 eggs
1/4 tsp. salt
1/4 c. melted butter
1 c. evaporated milk
Combine in large skillet. Alternate layers eggs and
sauce, ending in sauce. Put rest of mushrooms on top. Cover
and bake at 275 degrees for 1 hour. Serves 12.
