CHICKEN JERUSALEM

2 1/2 to 3 lb. chicken, cut up
2 Tbsp. olive oil or nonstick
frypan
1/2 lb. fresh mushrooms or 2
cans, sliced
2 garlic cloves, chopped
6 oz. jar artichokes or canned
ones
1/2 tsp. oregano
2 c. canned tomatoes
black pepper and lite salt to
taste

Place oil in frypan, add garlic and heat 3 minutes.
Brown chicken, turning once. Place in baking dish, add mush-
rooms, artichokes, oregano, tomatoes with liquid, salt and
pepper. Cover; bake at 350 degrees for 1 1/2 to 2 hours. For a spicy
taste, add 2 tablespoons picante sauce. Use white meat of
chicken (skinned) and cut calories.
