PORCUPINES IN TOMATO SAUCE

Porcupines:

10 oz. ground turkey
2 oz. uncooked converted rice
1/4 c. diced onion
2 Tbsp. chopped fresh parsley
1 tsp. salt
1/8 tsp. each margarine and
thyme
dash of pepper

Sauce:
1 c. tomato sauce
1/2 c. canned chicken broth
1/8 tsp. minced garlic

To prepare porcupines: Preheat oven to 350 degrees. In medium
bowl thoroughly combine all ingredients for porcupines. Shape
into 8 equal balls. Spray a 1 quart casserole with nonstick
cooking spray and arrange turkey balls in casserole.
To prepare sauce and bake: In small bowl thoroughly
combine all ingredients for puree. Pour over porcupines. Cover
casserole and bake for 1 hour, turning porcupines once during
baking.
