1 egg
pinch of salt
6 Tbsp. unsweetened pineapple
4 slices protein bread
1/2 c. low-fat cottage cheese
4 slices pineapple (packed in
own juice)
sugar substitute

Combine egg, salt and juice; beat slightly. Dip bread
into mixture. Place the wet bread on a cold, nonstick skillet.
Cook slowly over moderate heat until one side is brown. Turn
carefully with spatula. Continue to cook until brown. Top each
slice of toast with 2 tablespoons cottage cheese and pineapple
ring. Broil under high heat until heated and bubbly. Sprinkle
with cinnamon and sugar. Serve hot. Makes 4 servings, 129
calories each.
