NO PEEK BEEF STEW
2 lb. lean beef, cubed
2 to 3 stalks celery, sliced
1 onion, chopped
1 green pepper, chopped
4 medium potatoes, cut up
6 carrots, sliced
1 1/3 c. V-8 juice
2/3 c. water
1 Tbsp. tapioca
2 to 3 Tbsp. sugar
salt and pepper to taste
Put all ingredients in 3 quart casserole and bake 3 to 4
