LOW CHOLESTEROL JAMBALAYA|
10 oz. pkg. frozen peas
1/2 lb. diced turkey ham
1 1/2 c. cooked, cubed chicken
1 small onion, sliced
1/2 garlic clove, minced
16 oz. can tomatoes, cut-up
1/2 c. sliced celery
1/4 c. sliced black olives
1/2 tsp. Worcestershire sauce
1/4 tsp. hot pepper sauce
1 tsp. cooking oil
1 1/2 c. cooked white rice
Cook onion and garlic in 1 tablespoon oil until golden;
stir in tomatoes, chicken, turkey ham, celery, olives,
Worcestershire sauce and hot pepper sauce. Bring to boil;
cover and simmer 20 minutes. Stir in rice and thawed peas.
Cover and continue cooking 5 minutes or until thoroughly
heated. Makes 4 servings.
