IRISH PRIDE CASSEROLE 1/2 lb. cooked corned beef 1 small head cauliflower 1/2 lb. Old Canadian cheese, shredded 4 scallions or green onions 3 Tbsp. butter 3 Tbsp. flour 1 c. milk 1/8 tsp. nutmeg 1/2 tsp. dry mustard 1/4 c. bread crumbs 1/2 tsp. caraway seed Wash cauliflower; bread into flowerets. Put into boiling salted water; cook 5 minutes. Drain well; place in 1 1/2 quart buttered baking dish. Dice meat; sprinkle over flowerets. Chop onions; saute in butter 5 minutes. Blend in flour and cook 3 minutes. Warm milk and gradually whisk into butter and flour; add cheese and spices. Cook over low heat until cheese melts. Do not boil. Pour sauce over meat and flowerets. Sprinkle bread crumbs and caraway on top. Bake at 350 degrees for 30 minutes. Nice with cole slaw and hot rolls or bread. Serves 4.
