4 loin chops, 1/2-inch thick
2 Tbsp. vegetable oil
1/4 tsp. salt
3/4 c. water
1 (18 oz.) sweet potatoes,
1 tart cooking apple, sliced
1 small onion, chopped
3 Tbsp. brown sugar
1/8 tsp. pepper
1/2 tsp. cinnamon
4 tsp. cornstarch
1 tsp. salt
2 Tbsp. vinegar

Brown chops in oil. Place in 9 x 9 x 2-inch pan.
Sprinkle with 1/4 teaspoon salt and pepper. Top with sweet
potatoes, apple and onion. Combine brown sugar, cornstarch and
remaining salt and cinnamon in small bowl. Stir in vinegar and
water; pour off fat and add brown sugar mix. Bring to boiling
until thick. Pour over chops. Cover with foil. Bake at 350 degrees
for 45 minutes or until chops are tender. Serves 2 to 4.
