BAKED CHILI RELLENOS

6 eggs
1 Tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1 (4 oz.) can green whole
chilies
1/2 lb. Cheddar or Jack cheese

Separate eggs; beat egg whites until stiff. Mix flour,
salt and pepper with egg yolks. Add beaten egg whites. Pour
half of this mixture in casserole. Clean chilies and remove
seeds. Spread chilies over egg mixture and cover with cheese
slices. Pour rest of egg mixture over cheese. Bake 25 minutes
in 325 degrees oven. Serve with Mexican hot sauce.
