FIVE LAYER MEAL
1 lb. ground beef
1 Tbsp. shortening
1 1/2 tsp. chili powder
1/3 c. uncooked rice
2/3 c. chopped onion
2/3 c. chopped green pepper
2 large potatoes, thinly
sliced (1 lb. to 1 1/2 lb.)
1 lb. can tomatoes
1/3 c. catsup
1/3 c. water
Place 1 tablespoon shortening in skillet. Add ground
beef and onions. Brown. Stir frequently. When meat is brown,
add salt and chili powder and black pepper. Remove from
skillet. Cover bottom of frypan with thin potato slices.
Sprinkle uncooked rice evenly over potatoes. Spread beef
mixture on top of rice. Sprinkle chopped green pepper over
beef mixture. Add can of tomatoes. Add water to catsup and
pour over mixture (do not stir!). Place lid on pan and turn
heat high to bring mixture to cooking temperature. When steam
escapes from under the lid, turn heat low and cook 30 minutes.
Cut into squares. Each layer can be identified. This is a recipe from our database at Cookbooks On/Line!
