EGG-RICE CASSEROLE

1 lb. bacon
2 bell peppers
1 large onion, chopped
1 1/2 c. chopped celery
dash of salt
dash of pepper
dash of garlic
dash of oregano
1 (6 oz.) can mushrooms
1 box Uncle Ben's long grain
wild rice (6 or 7 oz.)
10 eggs

Cook Uncle Ben's rice as directed. Fry bacon and remove
from skillet and crumble. In hot skillet, add chopped pepper,
onion, celery and seasonings. Simmer until done. Add mush-
rooms with liquid. Add cooked rice. Break in 10 eggs and mix
well. Put into casserole. Top with bacon bits. Heat and eat.
