2 lb. lean ground beef
1 medium onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 (14 1/2 oz.) can stewed
1 (8 oz.) can tomato sauce
1/2 tsp. oregano
1 1/2 c. milk
1 1/2 c. corn meal
1 (5 3/4 oz.) can pitted
1 (16 oz.) can whole kernel
2 Tbsp. chili powder
Crumble beef into the bottom of a 3-quart baking dish.
Cook on High 5 minutes. Stir, and add onions, salt and pepper.
Cook on High 5 minutes more. Add stewed tomatoes, tomato sauce
and oregano. Stir. In a medium mixing bowl, combine milk,
cornmeal, olives, corn and chili powder. Stir until well
blended. Pour over meat mixture. Cover with plastic wrap, and
cook on High 20 minutes, turning dish once during cooking. Let
stand. Cover 5 minutes before serving. Serves 6 to 8.
