BARLEY CASSEROLE 1/2 c. butter 2 medium onions, chopped 3/4 lb. sliced mushrooms 1 1/2 c. pearl barley 1/8 tsp. pepper 3 c. chicken broth Heat oven to 350 degrees. Melt butter and saute onions until tender. Add mushrooms and cook 2 minutes. Add barley and cook until delicately browned. Place ingredients in 1 1/2 quart casserole. Add pepper and 2 cups broth. Bake covered 45 minutes. Stir and add 1 cup broth. Bake 30 minutes more. Serves 6 to 8.
