BEEF CHOUFLEUR

1 lb. round steak
1 small head cauliflower
2 Tbsp. butter
1 green pepper
1/4 c. soy sauce
1 clove garlic
2 Tbsp. cornstarch
1/2 tsp. sugar
1 1/2 c. beef broth
3 c. rice
1 c. sliced green onion with
tops

Brown meat in butter for 5 minutes. Add cauliflower,
green pepper, soy sauce and garlic. Stir lightly to coat
vegetables with sauce. Cover pan and simmer for 10 minutes.
Blend cornstarch, sugar and beef broth. Add this to meat
mixture with the green onions. Cook, stirring until thickened.
Serve over rice. (Elk or deer meat turns out very well in this
recipe.)
