CHILE RELLENOS CASSEROLE

1 1/2 lb. hamburger, browned
8 to 12 whole green chilies
2 lb. sharp Cheddar cheese,
grated
2 Tbsp. flour
4 eggs, beaten
1 to 2 tsp. salt
1 to 4 tsp. pepper
1 1/2 c. cracker crumbs
1/4 c. milk

Rinse chilies and remove seeds. Layer chilies, opened
flat in bottom of greased 9-inch casserole. Cover with cheese,
then hamburger. Repeat layers. Combine milk, salt, pepper,
eggs and flour. Pour over layers, lifting to let egg mixture
run underneath. Top with crumbs. Bake at 350 degrees about 35
minutes. Garnish with tomato wedges. Serve on top of shredded
lettuce.
